in january i'm traveling to london on a working visa and planning on working in bars and night clubs.
do many venues uses tip trays and what are the best type of venues to work in to get tipped?

Sorry, but there is not such type of a working visa for Americans. They can only apply for highly skilled working visa or skilled working visa in fields which cannot be filled by the British or EU/EEA workforce and require employer sponsorship, same as for Brits in the U.S.
Work in bars or night clubs does not fall under the sponsorship work visa category. If you are allegedly in a visa application process and have sent the money for the "work visa" through Western Union you have been scammed for sure.
